Italian Sausage Sandwich

My mother made this for dinner when I was growing up and it was always a hit. Also, it is super easy to make! The title states “Italian Sausage”, but my mother, nor I, ever use Italian Sausage for it. We use Beef Kielbasa. We tend to eat these open faced to save calories.

Italian Sausage Sandwich – recipe

6 Hoagie Rolls
1 lb. Italian sausages (or beef kielbasa), sliced 1/4″ thick
1/2 Sweet onion, sliced thin
3/4 cup green bell pepper, sliced thin
2 tomatoes, cut into wedges
2 T water
1/4 t salt
1/4 t oregano
1/2 cup shredded mozzarella cheese
1 cup shredded lettuce

Mia en place

Brown sausages over medium high heat and drain well.

If there is not too much grease to drain, I tilt the ban and use a paper towel to soak up the grease.

Add onion, green bell pepper, tomato and water.

Cook over low heat, stirring occasionally until vegetables are tender, about 7 minutes.

Remove from heat and stir in seasonings. Adjust seasonings to taste.

Broil rolls until browned. Spoon meat mixture on bottom half of each roll. Sprinkle with cheese and bake at 400 degrees F for 2 minutes or until cheese melts.

Top with lettuce and roll top.
